Ingredients
- Tortillas
- Brats
- Onions (sweet, white, yellow or red will all work)
- Fried onion
- Jalapeños
- Egg
- Cheese of choice
Directions
- Sauté the onions until almost caramelized.
- Add and sauté the jalapeños until soft and the onions are caramelized and transfer to a plate.
- Cook the brats in a pan, adding cheese at the end so it melts and crisps up a little bit.
- Cut up the brats into 1 inch pieces and add the egg, brats, caramelized onions and sautéed jalapeños back to the pan.
- Cook the eggs folding the mix like an omelet as its cooking and break up the egg as it solidifies.
- (Optional) Toast the tortilla on a burner on low on the stove grates or electric burner glass. Only for a minute just enough to toast without burning them.
- Divide filling up between tortillas with the fried onions and any remaining cheese and roll up the burritos.
- Enjoy!
