Ingredients

  • 17oz (500g) gnocchi, uncooked
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp (1oz) tomato paste
  • 1 tsp red pepper flakes, plus more for serving
  • 1/2 cup (4oz) roasted red peppers, diced
  • 1 cup (8oz) heavy cream
  • 1/2 cup (4oz) parmesan cheese, grated (plus more for serving)
  • 1 tbsp salted butter
  • Salt and pepper, to taste

Instructions

  1. Cook gnocchi according to the directions on the package.
  2. Meanwhile, heat the olive oil in a large pot or skillet on medium. Add the garlic and cook until fragrant (1-2 minutes).
  3. Add the tomato paste, red pepper flakes, and roasted red peppers and sauté for another 2 minutes.
  4. Add the heavy cream, parmesan cheese, and butter. Stir until the cheese has melted and the sauce is thick. Season with salt and pepper.
  5. Add the cooked gnocchi and toss to coat it in the sauce.
  6. Serve with more parmesan cheese and red pepper flakes.
