Ingredients
- 500g gnocchi, uncooked
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp red pepper flakes, plus more for serving
- 1/2 cup roasted red peppers, diced
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated (plus more for serving)
- 1 tbsp salted butter
- Salt and pepper, to taste
Instructions
- Cook gnocchi according to the directions on the package.
- Meanwhile, heat the olive oil in a large pot or skillet on medium. Add the garlic and cook until fragrant (1-2 minutes).
- Add the tomato paste, red pepper flakes, and roasted red peppers and sauté for another 2 minutes.
- Add the heavy cream, parmesan cheese, and butter. Stir until the cheese has melted and the sauce is thick. Season with salt and pepper.
- Add the cooked gnocchi and toss to coat it in the sauce.
- Serve with more parmesan cheese and red pepper flakes.
